Warm weather is always a good time to enjoy a refreshing fruit drink. Blending different types of tropical fruit juices together always make delicious fruit punches. Try using juices or nectars like passion fruit and guava and add that to your regular flavours like orange and pineapple; this really does make an exceptionally delicious drink. Adding fresh fruit garnishes always adds more excitement to the drinks as does snazzy drink umbrellas and stirrers.

TROPICAL FRUIT FREEZE

2 cups chopped peeled and seeded papaya

2 cups cubes fresh pineapple

2 tsp fresh ginger, grated

1 large banana

4 cups chilled fruit juice (orange, or pineapple)

2 cups crushed ice

Place all ingredients into a blender and blend until thick and icy. n Serves 6 to 8

MEXICAN FRUIT COOLER

2 cups fruit juice

1 cup ice

1 cup papaya or mango

1 cup pineapple

1/4 cup granulated sugar

1 tbs fresh lime juice

Place all ingredients into a blender and blend until thick and icy.

* Serves 6MANGO

PINEAPPLE PASSION

1 cup chopped ripe mango

1 cup pineapple juice

2 tbs lime juice

Ice

Place all ingredients into a blender and process until thick.

* Serve in tall glasses, garnished with mango or pineapple pieces.

MANGO STRAWBERRY SMOOTHIE

1 cup chopped ripe mango

1/2 cup frozen strawberries or

4 to 6 strawberries

1/2 cup milk or unflavoured yogurt

1/4 cup sugar syrup, more or less to taste

ice

Place all ingredients into a blender and process until thick.

* Serve in tall glasses.WATERMELON COOLER

8 cups watermelon, cut into chunks, seeds

removed

1/2 cup fresh lime juice

2 cups sugar syrup

Blend water melon with lime juice and syrup.

Pour into ice-filled glasses. Or pour into a large jug and refrigerate until ready for use.

Serve immediately.

* Serves 10 to 12PINEAPPLE

ORANGE BANANA SMOOTHIE

1 banana

1 cup fresh pineapple

1/2 cup orange juice

1/2 cup milk

sugar syrup

Place ice into a blender, add banana, pineapple, and orange juice, process until thick, add milk and sweeten to taste if necessary.

Tropical fruit punch

2 cups guava juice

1/2 cup pineapple juice

1/2 cup orange juice

1/3 cup syrup

2 bananas

Crushed ice

Fresh fruit garnishes

Blend all ingredients together, pour over crushed ice and garnish.

What is the best way to properly position my oven racks? Does it differ depending on what I am making?

Unless otherwise specified in a recipe oven racks should be positioned in the middle of the oven. This allows for even distribution of heat and air circulation while baking.

For breads and pizzas, though, it is recommended to position your rack on the lowest rack of your oven.

And for baking items that need not brown too quickly, you could position the rack in the upper third of the oven.

When I read about baking breads and cakes there is often a difference between flours needed, that is: cake flour for cakes, pastries and quick breads, and bread flour for breads. The difference in these two flours is gluten content. Can you tell me what is gluten?

Gluten is the elastic substance that is formed when the protein in wheat flour combines with liquid in a recipe. This is what gives the elasticity to yeast doughs, which have to be kneaded and stretched. However it can translate to toughness in cakes and quick breads.

Flours such as cake and pastry flour, which have a low protein content tend to produce tender baked goods. There is a variety of flour available to us in our supermarkets such as all purpose, cake flour and bread or bakers flour try the different types and notice the difference in textures of your baked product.
